Fishing pole s'mores and lemon love note cupcakes! And bingo!
Yes, that's a pretzel fishing pole sticking out of these wondrous s'mores cupcakes cooked up by blogger and custom cupcake maker Amanda Cupcake, who you can also find on Facebook and who does custom cupcakes (and is based in Wisconsin). The business-minded among you will appreciate that these cupcakes sprang from her working on her business plan:
I was writing my business plan tonight.
I was on the first page where I had to state my mission. One of the my missions in my journey to start a bakery is to share joy and love with the world through my cupcakes. Another vision of mine is to bring community together to just forget about everything on the outside world, and perhaps for even a moment there would be "peace" in the realm of cupcakes.

They each have inspiration words baked inside:

And last but not least - I am a HUGE bingo fan and I love this bingo cupcake cake, with a special N-70 for the birthday girl (Amanda's grandmother). Love these! See more images on Flickr and Facebook.

Stacie's Test Kitchen Bakes Sprinkles Lemon Cupcakes Mix
Although I do not accept Sprinkles' claim that their ingredient listed as gelatin is actually carrageenan (so very different!), I made a Sprinkles at-home lemon cupcake kit without the iconic dots. The dots are where the animal-based gelatin is located. (As a vegetarian, I can't eat animal-based products.)

The directions were fairly straightforward (and so loaded with butter I knew the finished product would be rich and delicious). Sprinkles recommends baking longer than I normally would, and mentions that there will be ahem, shrinkage as the cupcakes cool.

There was a bit of shrinkage but not too bad. I was worried the baking cups would pull away but they held up just fine.

I found the cake to be very dense and heavy, almost like a pound cake and not as lemony as I'd hoped, but the frosting was exceedingly and perfectly lemony and refreshing. Combined they provided the lemon kick I'd been hoping for.

In no way could I make the frosting look properly Sprinkles-like, so I didn't even try. Also, my frosting was a bit too chilled for proper frosting. I'd made a double batch to handle the 24 cupcakes I made (two boxed mixes).

I topped the cupcakes with tiny edible (and gelatin-free) silver stars I bought at the Wilton tent sale.
