Festive pina colada cupcakes with cream cheese frosting and filling, topped with a pineapple chunk and a cherry

Food blogger Beantown Baker made these pina colada cupcakes back in March, but they stood out to me and are festive so I thought I'd post them now, click above for the recipe for the coconut cake and cream cheese frosting and filling. I used festive cupcake liners and topped each with a pineapple chunk and cherry. The toasted coconut on the outside added some great nuttiness and texture to the cupcake overall.

Chocolate chip cookie filled cupcakes and recipe link!

Brandy of Brandy's Baking, in a guest post at the blog Alli N Son posted these chocolate chip cookie filled cupcakes, along with the recipe! She writes:

Can’t decide between a chocolate cupcake and a chocolate chip cookie? I don’t know about you, but I find myself in this predicament quite frequently. This little cupcake is the solution–have both! It’s a very tasty chocolate cupcake topped with vanilla buttercream, mini-chocolate chips and an itty-bitty chocolate chip cookie. That’s not all though! There’s a delicious bit of chocolate chip cookie dough baked in the center of the cupcake.

3 easy steps to Core & Fill cupcakes

Recently, I made Caramel Apple cupcakes where I needed to core and fill both mini and regular size cupcakes. I realized how simple the process was and decided to take a few pictures so I could share the process with you.

Mini Cupcakes
Tools: 
Apple corer
Piping bag

3 Steps:
-Press the apple corer into the center of the mini cupcake.  Twist gently and pull out the center piece of cake.
-Fill a piping bag with your mixture, cut off the tip so you have about a 1cm opening.
-Pipe the mixture into the cupcake just until it reaches the top.

Standard Cupcakes
Tools: 
Sharp knife
Mini ice cream scoop

3 Steps:
-Using a sharp knife, cut a cone out of the center of each cupcake.  Make sure the knife goes almost to the bottom of the cupcake when cutting the cone.  Trim off the bottom of the cone so what you have left is a flat top.
-Using the mini ice cream scoop, scoop a dollop of filling into each cupcake until it's full.
-Replace the flat top of cake back on top of the filling and press down until it's flat.

Peach cobbler and lemon meringue filled cupcakes at Molly's Cupcakes = yum yum yum!

I visited the new New York version of Molly's Cupcakes (see Nichelle's post about their opening, which is one of the most spacious cupcake bakeries in New York City and has what looks like the same flavors and much of the same design (sprinkle bar, swings) as the Chicago branch. Full writeup coming soon, but I loved the peach cobbler cupcake best (on top) and also the lemon meringue! $3.75 a cupcake is high for New York, and definitely adds up, plus these are sweet and big generally, so I recommend sharing with a friend or two!

Molly's Cupcakes Now Open In New York City

Good Golly, Miss Molly is here! Molly's Cupcakes is a very popular Chicago bakery that has expanded to New York. Molly's Cupcakes has opened on 228 Bleecker Street in Greenwich Village. Instead of a big grand opening Wolfie the owner opted for a soft opening. I stopped by Friday afternoon and sampled a few of their centerfilled cupcakes.

Check out the creamy filling inside. These are cupcakes that could be eaten with a knife and a fork especially if you are sharing.

The Real Housewives of New Jersey star Teresa Giudice makes "Holy Cannoli" cupcakes at cookbook signing

Fans lined up around the block, and the large crowd was directed by Verona Police as well as private security people retained by the bakery.

During the signing, DiPaolo was in the kitchen preparing countless batches of "Holy Cannoli" cupcakes, which the bakery gave out in pairs to the assembled fans. When asked how many free cupcakes were given away in total, DiPaolo said he lost track after 650 boxes. The bakery even raffled off a fondant cake, valued at $500, to one lucky winner.

The recipe, he said, was borrowed from Giudice's cookbook, and consists of white cake stuffed with and topped with cocoa-infused cannoli cream.
