Guess who's totally over cupcakes? The Winnipeg Free Press

From The Winnipeg Free Press - thanks for the shoutout about our Cupcake Cruise! Personally, since I've yet to see someone walk up to someone else and shove a cupcake directly in their mouth, I think if you're not into cupcakes don't eat them, if you don't like cupcake books or blogs, don't read them. Not everyone likes cupcakes, and I'm okay with that, but so what if others do? That's why I love those who create cupcake goodies out of joining cupcakes and other desserts. It's not a competition, except for those who need to write "whoopie pies are the new..." headlines.

The cupcake is having a cultural moment. (Literally. It’s National Cupcake Week in the U.K. right now.) We have cupcake bakeries, cupcake TV, cupcake blogs, even cupcake cruises, possibly for people who don’t think they’ll gain enough weight on a regular cruise...

The cupcake is supposed to be innocence in a little paper cup. It’s supposed to be welcoming and nurturing, not overconfident and chippy and combative. Watching Cupcake Wars, the reality TV show about battling cupcake bakers, I keep expecting someone to get stabbed in the back with an offset spatula.

In their bid to retain control of the kingdom of carbohydrates, cupcakes have undeniable tactical advantages. They are infinitely decoratable. They have great culinary range, from the Madagascar-vanilla-Swiss-buttercream-espresso-mousse couture cupcake to the humble Hostess Cupcake, with its eerily distant best-before date. They are versatile. (Sometimes a bit too versatile — fig and blue cheese? Chocolate, chili and bacon?)

And cupcakes have demonstrated remarkable staying power. The term "cupcake" was first seen in 1828 in Seventy-Five Receipts for Pastries, Cake and Sweetmeats by Miss Eliza Leslie. During the recession, when cupcake doomsters predicted that no one was going to spend $4 on a two-bite treat, cupcakes not only survived but thrived. (This is evidently a common economic model: A Depression-era woman who could no longer afford to buy a new dress often cheered herself up with one little lipstick. )

Childhood cancer awareness benefit cupcakes by Houston's Crave Cupcakes

Via Houston food blog Eating Our Words:

The cupcake company has partnered with MD Anderson Children's Cancer Hospitals's Art in Medicine program to raise awareness about childhood cancer.

Pediatric cancer patients have designed a logo for the project, which will be featured on all of the CRAVE Cupcakes's Childhood Cancer Awareness boxes. In addition to this artwork, a portion of the proceeds from each box purchased will go to support MD Anderson's crucial Art in Medicine program, which helps to provide a better quality of life for pediatric cancer patients through art instruction and therapy.

Even better, a portion of the proceeds from each box of CRAVE Cupcakes delivered anywhere within the Medical Center -- whether they're Childhood Cancer Awareness boxes or not -- will also go to benefit the program.

NYC diner Deluxe hosting cupcake festival

Exciting! Glad we're hearing about it before it ends. New Yorkers: behold, a cupcake festival. From The Columbia Spectator:

Hey Columbia, we’ve got a treat for you. Literally. Our home-style diner Deluxe (2896 Broadway between 112th and 113th streets) is hosting their first ever cupcake festival. From now until September 18th, the restaurant will sell handmade cupcakes baked by their renowned pastry chef Regis Courivaud for $3 each...This is the first time Deluxe is sharing their cupcake recipe with the world, and they might add the dessert to their regular menu depending on customer responses. So far business has been good—they’ve sold over 200 cupcakes since the festival started on Monday.

Georgetown Cupcake owners: "Our business plan was obsolete on day one"

From a U.S. News & World Report interview with Georgetown Cupcake Katherine Kallinis and Sophie LaMontagne, whose cookbook The Cupcake Diaries comes out in November.

Did you make any financial mistakes along the way?

Tons. We probably started way too small, but that was all we could afford at the time. We spent a lot of money rebuilding things. We were undershooting every single time. We did our kitchen three or four times in the first location, and finally moved to M Street, trying to keep up with demand. If we had planned that from the get-go, we wouldn’t have wasted all that money.

Did you create an official business plan before launching?

We did. I used to work in venture capital, so I’m used to working with start-ups and know the importance of a business plan. We drew up a rough business plan. But I also learned that your business plan goes out the window and doesn’t necessarily go how you think it will. So we drew one up for initial planning. We were very conservative in our projections, and we thought our business would be mostly special event orders, for baby showers and weddings, with little walk-in traffic. We didn’t plan on the walk-in traffic.

On the first day, we said, ‘We’ll bake 500 cupcakes.’ We ended up selling out in a couple hours, and now we bake 10,000 cupcakes a day. We couldn’t have predicted that. Our business plan became obsolete on day one. So it’s not about planning but about how you adjust to changes. The people who do well are the ones who will adjust.

Magnolia Bakery selling peanut butter and grape jelly cupcake; will set up icing bar in Bloomingdale's in LA

Wow! For the peanut butter cupcake lovers, here's some good news from Magnolia Bakery, via Facebook:

Who wouldn't want to take part in a study that involves eating 4 cupcakes a day??

It sounds like every dessert lover's dream: 40 volunteers will eat four cupcakes a day in a university experiment to study the effects of fat on the human body, The Local Sweden reported Friday.



The volunteers, students at Uppsala University, will keep up their sugary marathon for six weeks.



Fredrik Rosqvist, a PhD student specializing in fatty acids and metabolism who is leading the study, said it was not difficult to find 40 subjects willing to step forward and put their girth on the line, the website reported.



"The idea is that different kinds of fat have different effects on the human body," Rosqvist told Sveriges Radio (SR).



He will personally bake all the cupcakes, to make sure they're uniform, as well as monitoring the medical health of his subjects.

To get an idea of the job awaiting him, the ingredients for 8,000 cupcakes include 130 kilos of flour, 105 kilos of sugar, 105 kilos of oil, 50 kilos of eggs and 25 kilos of milk powder.



“It will be a long time before I bake another cupcake for myself” he said to SR.

The sweet treat on wheels – which joins the ranks of a handful of other food trucks popping up in Boston – also makes stops in Back Bay and on Boston University’s campus.

“My dream is to make as much money selling cupcakes as I did in publishing,” said DeMarco, who bakes the tiny desserts with locally sourced and organic ingredients in a community kitchen in Jamaica Plain. "I've baked my entire adult life," she added, "but i don't like to cook."

Last Friday, Cupcakory drew a small crowd of foodies. Customers loved the rich selection, which included salted caramel on chocolate cake and chocolate frosting on vanilla cake. A half-dozen cupcakes go for $16.50.


A few weeks ago, The Boston Globe ran a story about a new food truck initiative in Boston, whereby food trucks would claim permanent locations:

On Tuesday, Mayor Thomas M. Menino announced that "food trucks are ready to serve 'wicked good food' on Boston’s streets with 15 new permanent locations in several neighborhoods." The announcement said that the food trucks would rotate between locations in the Back Bay, South End, Fenway/Kenmore, and other neighborhoods starting July 13, 2011.

The Real Housewives of New Jersey star Teresa Giudice makes "Holy Cannoli" cupcakes at cookbook signing

Fans lined up around the block, and the large crowd was directed by Verona Police as well as private security people retained by the bakery.

During the signing, DiPaolo was in the kitchen preparing countless batches of "Holy Cannoli" cupcakes, which the bakery gave out in pairs to the assembled fans. When asked how many free cupcakes were given away in total, DiPaolo said he lost track after 650 boxes. The bakery even raffled off a fondant cake, valued at $500, to one lucky winner.

The recipe, he said, was borrowed from Giudice's cookbook, and consists of white cake stuffed with and topped with cocoa-infused cannoli cream.

Cupcake Espresso now open in Newcastle, New South Wales

Another cupcake bakery opens! This one is in Newcastle, New South Wales, and here's more info from Newcastle Herald:

Nathan Wicken and partner Adriana Daley opened Cupcake Espresso last Tuesday

‘‘We figured there was a market for this in Newcastle,’’ Wicken, a trained chef, told GT.

‘‘A lot of the cafes that have opened in the area recently didn’t necessarily specialise in anything specific, so we thought that the cupcakes in particular could be our point of difference.

‘‘We wanted to be a specialty shop, limit ourselves to a couple of elements and hone in on those rather than spread ourselves toothin.

‘‘We think this area has a lot to offer, and I think it’s just going to get better and better around here.’’

The couple had seen how successful cupcake stores had already been in Melbourne and Sydney, and didn’t see why the concept wouldn’t work in Newcastle, too. However, cupcakes aren’t the only thing on the menu.

There is also a range of macarons available, as well as pre-made sourdough sandwiches, pastas and take-home meals.

Lauren Conrad wants to open a cupcake bakery

Who knows if this is true, but if she did, it'd be interesting, at the very least.

Former The Hills star Lauren Conrad left the show that made her famous to become a respected fashion designer and bestselling novelist and now rumor has it that she’ll be adding “bakery owner” to her list of hidden talents.

Apparently Conrad loves to bake everything from cookies to cakes and various other sugary snacks and now she’s thinking it would be a great time to add a posh bakery with an emphasis on specialty gourmet cupcakes to the mix of businesses she currently owns.

Hollywood snitch Janet Charlton writes of the endeavor:

“…She’s looking at locations in the West Hollywood area where she can open a bakery of her own.”

Ramadan cupcakes in Turkish Delight, Sticky Date and Pistachio Praline from Kitsch

Al Bawawa writes about cupcakes in the United Arab Emerates in "Ramadan delicacies from Kitsch Cupcakes" and says:

Kitsch will be introducing a Pistachio Praline cupcake, a vanilla base cupcake topped with vanilla icing and a hint of pistachio praline. If you are one of those who love pistachio ice cream, this cupcake is a must-try! “Pistachio is a traditional ingredient found in most desserts that originate from the Arab world and people love it. A Pistachio cupcake has been long-due!” claims Dogmoch.

Turkish Delight, a cupcake with a chocolate base and a combo of vanilla and chocolate icing finished with fine traditional Turkish ingredients is the other addition to Kitsch’s menu for this month. “The Turks are known for their unique desserts so we’ve borrowed some ingredients from them and mixed it with our secret recipe,” adds Dogmoch. Kitsch will also be recalling its famous Sticky Date cupcake, a moist date cupcake with butterscotch icing for Ramadan.

A percentage of the sales of the Ramadan range of cupcakes will be donated to one of the local charities. “Ramadan is the month of giving and baking smiles on the faces of innocent children is the least we can do during this month,” explains Dogmoch. Kitsch will also be surprising children with special needs with its mouth-watering delights throughout the month.

Sprinkles Cupcakes vs. Pink Sprinkles: another cupcake lawsuit

News of another cupcake lawsuit broke today, this time of Sprinkles Cupcakes suing a bakery in Fairfield, Connecticut called Pink Sprinkles Cupcakes. My personal two cents, speaking only as myself, is that you should make your company name as unique as possible and that Sprinkles will likely win this won, as they have with other lawsuits, but that remains to be seen (we'll keep you posted!). Via Forbes:

Nelson's company, Sprinkles Cupcakes, is so frosted that it filed a federal trademark-infringement lawsuit Friday in Connecticut against a store named Pink Sprinkles. The lawsuit claims the similarity in names is likely to cause confusion in the marketplace.

"The resulting confusion will damage Sprinkles and injure its reputation in the trade and with the public," the lawsuit says.

"Frost me baby one more time" and "stop drop & frost" are "daily frostism"s at Frost Cupcake Factory

I love when a cupcake bakery really makes a bold statement, and the newly opened Frost Cupcake Factory does with these "daily frostism" sayings, via their Facebook page (where you can check out more of them)!





San Jose Mercury News reports that owner Andrea Parks is self-taught:

The scrumptious lime green and pink shop she designed has lots of seating for both big and little cupcake fans. Besides, we can't be the only ones tired of getting frosting on the steering wheel. (What, your cupcakes make it all the way home?) The lineup of flavors includes the top-selling mocha java, lemon meringue, rose velvet (her version of red velvet is named after a grandmother), burnt almond, PB&J, caramel banana, key lime and the kid-friendly frostfetti.

Robicelli's to open Brooklyn cupcake bakery at end of July

One of our favorite New York City cupcake companies, Robicelli's, is profiled in the New York Daily News, which reveals that they're opening their first retail storefront bakery in the DeKalb Market in Brooklyn at the end of July! (They used to own a gourmet market which also sold cupcakes.). Very exciting news for Robicelli's fans and those who've yet to discover their unique, fun flavors.

From the article, which has more information on how they got started and built their family-run business:

"We started using a borrowed kitchen and $40 in quarters I stole from my kids' piggy bank to buy butter and eggs," says Allison.

Now, 150 flavors later, with nearly 400 recipes still on their wish list, Matt and Allison have made Robicelli's irresistible.

Their unconventional flavors include Allison's favorite, Chicken and Waffles, and Matt's favorite, The Elvis — a peanut butter, bacon and banana combo.

They send out 1,400 cupcakes on Mondays, Wednesdays and Fridays to 15 locations, most recently Battery Place Market. They include everything from blue cheese to tiramisu.

Every cupcake, it seems, is a labor of love. Here's how Allison describes one:

"To make the tiramisu, first we make an espresso cake and then we hand-soak every cupcake into a dark espresso syrup to make sure that each is dripping with flavor. We take dark chocolate and espresso to make a really rich ganache and coat each and every one. We then make our French butter cream, which you really only see on wedding cakes, and put it on top of the cake. We then dust a nice, rich, Dutch processed cocoa powder from Belgium over the top of that."
