Junior Mint cupcakes and recipe link

Blogger Piper at Got It, Cook It made these Junior Mint cupcakes. Get the recipe at her blog, where she writes:

Food blogger Beantown Baker made these pina colada cupcakes back in March, but they stood out to me and are festive so I thought I'd post them now, click above for the recipe for the coconut cake and cream cheese frosting and filling. I used festive cupcake liners and topped each with a pineapple chunk and cherry. The toasted coconut on the outside added some great nuttiness and texture to the cupcake overall.

Jessie Oleson of Cakespy wants to draw you a cupcake on her nationwide bakery book tour!

The countdown has begun for beloved Cakespy blogger, artist, baker and author Jessie Oleson's first book: Cakespy Presents Sweet Treats for a Sugar-Filled Life. She will kick off a nationwide book tour on October 13th at her retail store, Cakespy, in at 415 E. Pine Street in Seattle's Capitol Hill neighborhood, and visit cupcake bakeries around the country, including Portland, the Bay Area, Boston, NYC, Philadelphia, Washington, DC, Chicago and more. Her New York City visit coincides with my birthday, November 10th, which is also National Vanilla Cupcake Day. She'll be at Brooklyn bakery Baked on the 9th (and Butter Lane on November 9th).

Chocolate chip cookie filled cupcakes and recipe link!

Brandy of Brandy's Baking, in a guest post at the blog Alli N Son posted these chocolate chip cookie filled cupcakes, along with the recipe! She writes:

Can’t decide between a chocolate cupcake and a chocolate chip cookie? I don’t know about you, but I find myself in this predicament quite frequently. This little cupcake is the solution–have both! It’s a very tasty chocolate cupcake topped with vanilla buttercream, mini-chocolate chips and an itty-bitty chocolate chip cookie. That’s not all though! There’s a delicious bit of chocolate chip cookie dough baked in the center of the cupcake.

Sample Recipe: A Chocolate Stout Cupcake with Vanilla Stout Buttercream

Beer Run
There's nothing like an ice-cold beer on a hot summer day, or while you're watching your favorite ball game. So we thought, why not make a cupcake with beer? We started with chocolate cake and then added our favorite stout into the mix. Next, we frosted them with our pumped-up creamy vanilla frosting, again with lots of stout, and then topped them with crushed chocolate-covered pretzels. And on that day, a winning combination was born!

Makes 12 cupcakes

Ingredient Roster

For the Chocolate Stout Cupcakes:
12 tablespoons (1 1/2 sticks) unsalted butter, softened
1/2 cup cocoa powder
3/4 cup dark stout, such as Guinness, poured and settled before you measure
2 large eggs, broken into a small bowl
1/2 cup full-fat sour cream
1 1/4 cups unbleached all-purpose flour
1 1/4 cups sugar
1 teaspoon baking soda
1/4 teaspoon salt

For the Vanilla Stout Buttercream:
8 tablespoons (1 stick) unsalted butter, softened
3 cups confectioners’ sugar, sifted through a strainer
3 tablespoons dark stout, such as Guinness, poured and settled before you measure
1/4 teaspoon pure vanilla extract
Pinch salt

Topping:
3/4 cup crushed chocolate-covered Pretzels

Plan of Attack:
Make the Cupcakes: Place a baking rack in the center of the oven and preheat the oven to 350°F. Line two 6-cup jumbo-size muffin pans with liners and set aside. In a small saucepan over low heat, melt the butter. Remove from the heat, add the cocoa powder, and stir until smooth. Then stir in the stout. You’ll think that you have some stout left to drink, but hold your horses! You’re going need some for the frosting, too. Set aside to cool, about 10 minutes.

In a medium-size mixing bowl, whisk together the eggs and the sour cream. Add the cooled chocolate mixture, incorporating well. Add the flour, sugar, baking soda, and salt, and whisk until smooth, scraping down the bowl as needed.

Fill each prepared muffin cup with 1/3 cup batter, about 2/3 full. Bake, rotating the pans halfway through, until the tops are just firm to the touch and a tester inserted in the center of a cupcake comes out clean, about 23 minutes. Leave the cupcakes in the pan on a rack to cool for 5 to 10 minutes. Transfer the cupcakes to the wire rack to cool completely before frosting, about 1 hour.

Make the Buttercream: In a medium-size mixing bowl, with an electric mixer on medium-high speed, beat the butter until light and fluffy, about 1 minute. Add the confectioners’ sugar, stout, vanilla, and salt into the bowl, and continue to beat until very smooth and creamy, 2 to 3 minutes, scraping down the bowl as needed.

Cupcake Construction: Get out that ice cream scoop (2 to 2 1/4 inches in diameter) and top each cupcake with a scoop of frosting. Sprinkle each cupcake with a tablespoon of the crushed pretzels. Cupcakes can be refrigerated for up to 3 days in an airtight container, or frozen for 1 month.

If You Like: Before you sprinkle on the pretzels, you can shine the cupcakes up a bit by taking a butter knife (no serrated edges, please) and pushing the frosting down to about an inch high, flattening the top, and then taking the knife and making a flat 45-degree angled edge all the way around the side of the scoop of frosting.

Virgin Beer Run: Substitute your favorite soda for the beer. We like a cola or root beer the best.

These fun, adorable chocolate-covered cherry chocolate cupcakes are from blogger Confections of a Foodie Bride. She's got the recipe(s) and writes:

Chocolate Cake – I’ve flip-flopped over the last few years on a favorite chocolate cake recipe. I’ve been torn between America’s Test Kitchen’s Old-Fashioned Chocolate Cake and Martha Stewart’s Devil’s Food Cake. But with this last batch of cupcakes, I think it’s finally settled. Martha’s recipe is fluffy, moist, and gets a big dose of deep chocolatey flavor from dutch-process cocoa. To me, it’s the perfect chocolate cake.

I bet you've never seen a cupcake with this flavor before!

Can you guess?



If I knew how to do a jump cut I'd make you truly guess, but I'm not that HTML savvy.

It's a...chocolate BBQ cupcake with honey sour cream frosting! I'm gonna go out on a limb and say that would be a tough one to guess. You can get the recipe for it at food blog a perfect kind of day, where there are also lots of other cupcake posts.

The cake is tangy and savory and not at all sweet. However, it seems that the longer the life of the cupcake, the lesser the barbecue sauce taste. The cupcake I tried fresh out of the oven tasted like a fresh slab of ribs {and i'm not kidding...}, but the cupcake I had later on that night {willpower doesn't exist on labor day} just tasted like a bittersweet chocolate cake.

The frosting is very tart and sweet at the same time. I wanted to make something that worked with the savory flavor of the barbecue sauce, not something that out-sweetened it. I did like the frosting with the cake, but in an effort to showcase the flavor of the cake a bit more next time, I might stick with a more basic chocolate frosting...


Yay for truly original cupcake flavors and experiments!

Bonfire s'mores and banana split cupcakes plus recipe links from Sweetology

Whoa! Most of you know I have a huge fondness for any and all s'mores cupcakes, but blogger Sweetology has taken what we know as the s'mores cupcake and added a summer twist to it by making bonfire s'mores cupcakes! Yum! They look amazing. Click through for the recipe.

One of the most popular desserts in America, the Banana Split

was invented by David Evans Strickler, a 23-year-old apprentice pharmacist at

Tassel Pharmacy in Latrobe, Pennsylvania in 1904.



Strickler created his Banana Split with three scoops of ice cream (vanilla, chocolate and strawberry) on a halved banana topped off with chocolate, marshmallow, nuts, whipped cream, and a cherry (he also commissioned a local glass company to create a long, narrow dish to accommodate a banana).
