Festive pina colada cupcakes with cream cheese frosting and filling, topped with a pineapple chunk and a cherry

Food blogger Beantown Baker made these pina colada cupcakes back in March, but they stood out to me and are festive so I thought I'd post them now, click above for the recipe for the coconut cake and cream cheese frosting and filling. I used festive cupcake liners and topped each with a pineapple chunk and cherry. The toasted coconut on the outside added some great nuttiness and texture to the cupcake overall.

Chocolate chip cookie filled cupcakes and recipe link!

Brandy of Brandy's Baking, in a guest post at the blog Alli N Son posted these chocolate chip cookie filled cupcakes, along with the recipe! She writes:

Can’t decide between a chocolate cupcake and a chocolate chip cookie? I don’t know about you, but I find myself in this predicament quite frequently. This little cupcake is the solution–have both! It’s a very tasty chocolate cupcake topped with vanilla buttercream, mini-chocolate chips and an itty-bitty chocolate chip cookie. That’s not all though! There’s a delicious bit of chocolate chip cookie dough baked in the center of the cupcake.

Magnolia Bakery selling peanut butter and grape jelly cupcake; will set up icing bar in Bloomingdale's in LA

Wow! For the peanut butter cupcake lovers, here's some good news from Magnolia Bakery, via Facebook:

Peach cobbler and lemon meringue filled cupcakes at Molly's Cupcakes = yum yum yum!

I visited the new New York version of Molly's Cupcakes (see Nichelle's post about their opening, which is one of the most spacious cupcake bakeries in New York City and has what looks like the same flavors and much of the same design (sprinkle bar, swings) as the Chicago branch. Full writeup coming soon, but I loved the peach cobbler cupcake best (on top) and also the lemon meringue! $3.75 a cupcake is high for New York, and definitely adds up, plus these are sweet and big generally, so I recommend sharing with a friend or two!

11 S'mores Cupcakes To Wish You A Happy S'mores Day!

Happy National S'mores Day! Yes, there is a National S'mores Day amongst all the food holidays out there and since s'mores are one of my favorite cupcake flavors I wanted to share some s'mores cupcake photos and recipe links. And yes, some of these have been blogged before, but I wanted to share my favorites! I love all things s'mores, the gooey-er (spelling?) the better. So happy happy happy!

I really wanted that graham cracker flavor but the texture of melted chocolate and gooey marshmallow – to stay true to S’mores. So I decided to go with a graham cracker flavored cake, replacing some of the flour with ground graham crackers. Then topping the cake with Nutella (the texture is just like melted chocolate and it tastes so good) and using my favorite Meringue frosting and torching it – which is a good reason on its own to make these cupcakes!
